What is a diploma in professional cooking? Course instruction covers international cuisine, including French, Italian and Asian. Gastronomy, menu development, safety, hygiene, culinary decoration, baking, pastry cooking and the latest in cooking techniques are often taught. Some courses teach academic writing, financial management, kitchen management, staff development and business ethics. Most require students to pass an exam at the end of course instruction. Programs take six months to one year to complete, depending on full-time or part-time status and the institution.
